Cooking with Ian – Lentil Health

  • Tin chopped tomatoes
  • Medium size onion
  • Two handfuls of brown lentils soaked overnight then brought to boil and simmered until soft.
  • 4 chillies de seeded and chopped
  • Thumb size grated ginger
  • Four cloves of garlic
  • Juice of half a lemon
  • Table spoon of curry powder
  • Teaspoon of turmeric
  • 2 tablespoons of tomato purée
  • ½ bag of spinach
  1. Use a small amount of cooking oil to cook onion on a medium heat until softened and reduced.
  2. Add grated garlic chillies and ginger and cook until soft.
  3. Add chopped tin tomatoes and stir in curry powder turmeric and tomato purée, stir and mix well and increase heat a little.
  4. Add the now softened and cooked lentils from separate pan of water.
  5. Add salt and black pepper to taste.
  6. Simmer for 15 minutes.
  7. Add spinach Serves 2 as meal or 4 with brown rice
